Low Carb Air-fried Beef Taquitos

This is not a classic taquitos recipe, I make them in the air-fryer or oven, but it is something I have recently put together for my fiancé and we both loved it! It is super easy and doesn’t take too long to make.

1. Heat olive oil in a skillet, add onion and fry until golden. Then add garlic and fry for 30 seconds until fragrant. Add ground beef, cook breaking it with a spatula until it is no longer pink. Mix in bell peppers, then tomato paste and spices. Cook for 1-2 min more and remove from the stove. Put the meat mixture in a bowl, mix in cheese. Let it cool down. 2. Warm mini wraps on a stove. Then spoon in about 50g of the meat and cheese mixture and roll it up. Repeat with the rest of the wraps. Put them in the air-fryer, spray with some olive oil and cook for about 10 min at 200C/400F. 3. In a food processor/blender blend the sauce ingredients. Add in water bit by bit until it reaches a desired consistency. 4. Serve your taquitos with the sauce and Pico de Gallo if desired.
