Low Carb Air-fried Beef Taquitos

This is not a classic taquitos recipe, I make them in the air-fryer or oven, but it is something I have recently put together for my fiancé and we both loved it! It is super easy and doesn’t take too long to make.

What you need
lime

tbsp sour cream

bunch cilantro

avocado
salsa

pinch cayenne

tsp ground black pepper

tsp onion powder

tsp dried oregano

tsp cumin powder

tsp smoked paprika

tbsp tomato paste

grated parmesan cheese

cup green bell pepper

cup bell pepper

garlic
sweet onion

lb ground beef

flour tortilla
Instructions
1. Heat olive oil in a skillet, add onion and fry until golden. Then add garlic and fry for 30 seconds until fragrant. Add ground beef, cook breaking it with a spatula until it is no longer pink. Mix in bell peppers, then tomato paste and spices. Cook for 1-2 min more and remove from the stove. Put the meat mixture in a bowl, mix in cheese. Let it cool down. 2. Warm mini wraps on a stove. Then spoon in about 50g of the meat and cheese mixture and roll it up. Repeat with the rest of the wraps. Put them in the air-fryer, spray with some olive oil and cook for about 10 min at 200C/400F. 3. In a food processor/blender blend the sauce ingredients. Add in water bit by bit until it reaches a desired consistency. 4. Serve your taquitos with the sauce and Pico de Gallo if desired.View original recipe
